A warming and nourishing carrot and lentil soup made with sweet carrots, hearty red lentils, and gentle spices, blended into a smooth, comforting bowl of wholesome flavor.

Ingredients

  • 1 lb carrots, peeled and sliced
  • 1 cup red lentils, rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice or fresh herbs (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until soft and translucent.
  3. Stir in the garlic and cook for about 30 seconds until fragrant.
  4. Add carrots, red lentils, cumin, and coriander, stirring to coat evenly.
  5. Pour in the vegetable broth and bring to a gentle simmer.
  6. Cook for 25–30 minutes, until carrots and lentils are very tender.
  7. Blend the soup until smooth.
  8. Return to low heat and season with salt and black pepper.
  9. Finish with lemon juice or fresh herbs if desired and serve warm.

Notes

  • Add ginger or turmeric for extra warmth.
  • Stir in coconut milk for a creamier texture.
  • Blend partially if you prefer a chunkier soup.
  • Soup thickens as it sits; thin with broth when reheating.
