Ingredients

  • 23 lb chuck roast or beef stew meat
  • 1 onion, sliced
  • 23 garlic cloves, minced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • 12 tbsp cornstarch + 2 tbsp cold water (for thickening)
  • 46 servings mashed potatoes (homemade or store-bought)
  • 46 slices thick-cut white or sourdough bread
  • Optional: butter, parsley, or extra gravy for garnish

Instructions

  1. Place sliced onion and minced garlic in the bottom of the slow cooker.
  2. Season beef with salt, pepper, and thyme, then place on top of the onions.
  3. Pour in beef broth and Worcestershire sauce. Add the bay leaf and cover.
  4. Cook on low for 8 hours or on high for 4–5 hours, until beef is fork-tender.
  5. Remove bay leaf. Shred beef using two forks and return it to the juices.
  6. Stir in a cornstarch slurry (cornstarch + water), cover, and cook on high for 15–20 minutes until gravy thickens.
  7. To serve, lay a slice of bread on each plate, top with mashed potatoes, then shredded beef and gravy.
