Ingredients

  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon turmeric powder
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 cups spinach
  • Salt and pepper, to taste
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until soft and translucent.
  3. Add garlic and ginger, cooking for 1 minute.
  4. Stir in turmeric and cook for 1 more minute to release flavor.
  5. Pour in chicken broth and bring to a boil.
  6. Add shredded chicken and coconut milk, then reduce to a gentle simmer for 15–20 minutes.
  7. Stir in spinach just before serving to let it wilt.
  8. Season with salt, pepper, and finish with lemon juice.
