Ube Crinkle Cookies are soft and chewy cookies made with ube halaya and ube extract, giving them a vibrant purple color and a nutty, vanilla-like sweetness. Rolled in powdered sugar before baking, they develop a crackled, eye-catching finish that’s as delicious as it is beautiful.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup ube halaya (purple yam jam)
  • 1 teaspoon ube extract
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup confectioners’ sugar (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, mix ube halaya, sugar, oil, eggs, vanilla extract, and ube extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Chill dough for at least 2 hours to firm up.
  6. Scoop tablespoon-sized portions, roll into balls, and coat generously in confectioners’ sugar.
  7. Place dough balls 2 inches apart on baking sheets.
  8. Bake for 10–12 minutes, until puffed and crackled on top.
  9. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Add shredded coconut for extra chewiness and a tropical twist.
  • Increase ube extract for a more vibrant purple color.
  • Try browned butter instead of vegetable oil for deeper flavor.
  • Mix in white chocolate chips for added sweetness.
