This Ultimate Creamy Beef & Mushroom Rice Bake is a hearty, cheesy casserole made with seasoned ground beef, mushrooms, rice, and a rich creamy sauce. Baked until golden and bubbly, it’s the perfect comfort food for weeknights or family gatherings.

Ingredients

  • 1 lb ground beef
  • 2 tablespoons olive oil or butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 teaspoon dried thyme (or 1 tbsp fresh thyme)
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 cup uncooked long-grain rice (white or jasmine)
  • 2 cups beef broth
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded mozzarella or cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil or butter and sauté onion for 3–4 minutes until soft. Add garlic and cook 30 seconds.
  3. Add ground beef, cooking until browned. Drain excess fat.
  4. Stir in mushrooms, thyme, paprika, salt, and pepper. Cook until mushrooms soften.
  5. Add uncooked rice and stir to coat in beef-mushroom mixture.
  6. Pour in beef broth and heavy cream, stirring until combined.
  7. Transfer to baking dish and spread evenly.
  8. Top with mozzarella (or cheddar) and Parmesan. Cover with foil.
  9. Bake 30 minutes covered, then uncover and bake 10–15 more minutes until rice is tender and top is golden.
  10. Cool 5–10 minutes, sprinkle parsley, and serve warm.
