Vanilla French Beignets are golden, pillowy doughnuts with a delicate vanilla flavor and a dusting of powdered sugar. Light, airy, and perfect served warm, they’re a classic French treat you can make at home.

Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 3/4 cup warm milk (about 110°F / 43°C)
  • 2 eggs
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • Vegetable or canola oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. Activate the yeast by mixing it with warm milk and a pinch of sugar. Let it sit for 5–10 minutes until foamy.
  2. In a large bowl, whisk together flour, sugar, and salt. Add yeast mixture, eggs, vanilla extract, and softened butter. Mix until combined.
  3. Knead the dough for 8–10 minutes by hand or 5 minutes with a mixer until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1½ to 2 hours, until doubled in size.
  5. Roll dough out on a floured surface to ½ inch thick and cut into 2–3 inch squares or rectangles.
  6. Transfer cut dough to a baking sheet, cover loosely, and let rise for another 30 minutes.
  7. Heat oil in a deep pot to 350°F (175°C). Fry beignets in small batches for 1–2 minutes per side until golden brown.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Dust generously with powdered sugar while still warm and serve immediately.

Notes

  • Add a splash of almond extract or citrus zest for extra flavor.
  • Beignets are best served fresh. Reheat gently in the oven if needed.
  • Try filling them with jam or pastry cream after frying for a twist.
