Ingredients

  • 2 cooked chicken breasts or thighs, shredded
  • 34 poblano peppers
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 4 cups chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 4 oz cream cheese, softened
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • Optional: 1 cup corn
  • Optional: 1 cup black beans
  • Optional: 1/2 cup diced tomatoes
  • Optional: 1 tbsp lime juice
  • Optional: chopped fresh cilantro

Instructions

  1. Roast poblano peppers under a broiler or over an open flame until blackened on all sides. Place in a bowl, cover, and steam for 10 minutes. Peel skins, remove seeds, and chop.
  2. In a large pot, heat olive oil or butter over medium heat. Sauté chopped onion until soft, about 5 minutes. Add garlic and cook for 1 more minute.
  3. Stir in roasted poblanos, cumin, paprika, salt, and pepper. Cook for another minute to blend flavors.
  4. Pour in chicken broth and bring to a simmer. Let simmer for 10 minutes.
  5. Reduce heat to low and stir in cream cheese, whisking until melted and smooth.
  6. Add shredded chicken and cream. Stir gently and heat through without boiling.
  7. Finish with lime juice and garnish with chopped cilantro or toppings of choice.
