Warming Italian broccoli soup is a cozy, rustic dish made with tender broccoli, aromatic garlic, herbs, and vegetables in a flavorful broth. Light yet satisfying, it’s perfect for chilly days or when you need a nourishing meal in a bowl.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 carrot, peeled and diced
  • 1 celery stalk, chopped
  • 1 large head of broccoli (florets and stems), chopped
  • 4 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of red pepper flakes, grated Parmesan, squeeze of lemon juice for finishing

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add the diced onion, carrot, and celery. Sauté for 5–6 minutes until softened.
  3. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the chopped broccoli, broth, oregano, basil, salt, and pepper.
  5. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes until broccoli is tender.
  6. Taste and adjust seasoning. Add red pepper flakes or lemon juice if desired.
  7. Serve hot with grated Parmesan or a drizzle of olive oil on top.

Notes

  • Use frozen broccoli if fresh isn’t available—reduce cook time slightly.
  • Blend part of the soup for a creamier texture without cream.
  • Add cooked white beans or pasta to make it more filling.
  • Finish with a splash of cream or milk for a velvety version.
