This Watermelon Mojito is a refreshing summer cocktail made with fresh watermelon, mint, white rum, and club soda. Light, fruity, and easy to make in 5 minutes—perfect for warm weather sipping!

Ingredients

  • 2 chunks seedless watermelon (about ½ cup, pureed)
  • 1 mint sprig (45 leaves for muddling, reserve tip for garnish)
  • 1 ounce simple syrup
  • 1½ ounces white rum
  • ½ cup club soda or sparkling water
  • Ice (crushed or cubed)
  • 1 lime wedge (optional, for fresh juice)

Instructions

  1. Puree the Watermelon: Blend watermelon chunks until smooth. Strain through a fine mesh sieve for a smooth texture if desired.
  2. Muddle Mint: In a cocktail glass, muddle the watermelon puree and mint leaves to release flavor.
  3. Assemble the Drink: Fill the glass with ice. Add simple syrup, white rum, and club soda. Squeeze in a bit of fresh lime juice, if using.
  4. Garnish and Serve: Garnish with mint sprig and a watermelon slice. Serve immediately.

Notes

  • Use bottled watermelon juice as a shortcut.
  • Adjust rum and soda to taste for stronger or lighter versions.
  • Make it a mocktail by swapping rum with white grape or apple juice.
  • Frozen version: blend all ingredients with ice into a slush.
