Ingredients

  • 2 cups cooked chicken (shredded or cubed)
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 2 cups fresh spinach
  • Optional garnish: red pepper flakes, fresh basil, extra Parmesan

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent, about 4–5 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in Italian seasoning, salt, and pepper. Pour in chicken broth and bring to a gentle boil.
  4. Add broken lasagna noodles and cook until tender, about 10–12 minutes.
  5. Reduce heat to low. Stir in cooked chicken.
  6. Add cream cheese, heavy cream, mozzarella, and Parmesan. Stir until melted and smooth.
  7. Add spinach and cook for 1–2 minutes until wilted.
  8. Taste and adjust seasoning. Serve hot, garnished with Parmesan, red pepper flakes, or fresh basil if desired.

  • Use rotisserie chicken for a quick shortcut.
  • To lighten it up, use milk and less cheese.
  • Add mushrooms or zucchini for extra veggies.
