Ingredients

  • 3 tablespoons chia seeds
  • 1 cup milk or plant-based milk
  • 1/4 cup Greek yogurt or plant-based yogurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 12 tablespoons maple syrup or honey (to taste)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a bowl or jar, whisk together the milk, lemon juice, lemon zest, maple syrup or honey, vanilla extract, and salt until well combined.
  2. Add the yogurt and whisk until smooth and creamy.
  3. Stir in the chia seeds, making sure they are evenly distributed.
  4. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  5. Cover and refrigerate for at least 2 hours, or overnight, until thickened.
  6. Before serving, stir again and adjust sweetness or lemon flavor as needed.
