A creamy, savory zucchini spread made with tender sautéed zucchini, garlic, and rich Parmesan cheese. Perfect as a dip, sandwich spread, or spooned over toasted bread, this easy appetizer is fresh, comforting, and full of flavor.

Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt (for drawing out moisture)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons cream cheese, softened
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Grate the zucchinis and sprinkle with salt. Let sit for 10–15 minutes to draw out excess moisture.
  2. Using a clean kitchen towel, squeeze the zucchini thoroughly to remove as much liquid as possible.
  3. Heat olive oil in a skillet over medium heat and sauté the garlic until fragrant, about 30 seconds.
  4. Add the zucchini and cook for 5–7 minutes, stirring occasionally, until softened and lightly golden.
  5. Remove from heat and allow the mixture to cool slightly.
  6. Stir in Parmesan cheese, cream cheese, black pepper, parsley, and lemon juice if using.
  7. Mix until smooth and well combined. Adjust seasoning to taste before serving.
