Ingredients

Meat and Vegetables

  • 2 tablespoons olive oil or butter
  • 1 cup diced yellow onion

  • 1 cup frozen peas and carrots (or 1/2 cup frozen peas + 1/2 cup frozen carrots)

  • 1 tablespoon worcestershire sauce
  • 1 tablespoon tomato paste
  • 2 teaspoons dried parsley
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons gluten free all purpose flour
  • 3/4 cup low sodium beef broth

Topping

  • 4 cups mashed potatoes

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (204°C) to prepare for baking the shepherd’s pie later.
  2. Heat the pan: Warm a large pan or Dutch oven over medium heat and add the olive oil or butter.
  3. Sauté onions: Add the diced yellow onions to the pan and cook for 5-7 minutes until they become translucent, enhancing their natural sweetness.
  4. Cook ground beef: Add the ground beef to the onions and sauté until the beef is mostly cooked through, breaking it up as it cooks.
  5. Add garlic: Stir in the minced garlic and sauté for an additional 1 minute to release its aroma.
  6. Incorporate spices and sauces: Add the Worcestershire sauce, tomato paste, dried parsley, rosemary, thyme, salt, and black pepper. Mix well to combine all flavors.
  7. Cook spices: Sauté the mixture for 1-2 minutes to deepen the flavor profile.
  8. Add gluten free flour: Sprinkle the gluten free all purpose flour evenly and stir until no clumps remain; this will help thicken the sauce.
  9. Add broth and vegetables: Pour in the low sodium beef broth, then add the frozen corn and peas and carrots mix (or separately if needed). Stir to incorporate.
  10. Simmer sauce and veggies: Let the mixture simmer on low heat for about 10 minutes, allowing the sauce to thicken and the flavors to meld perfectly.
  11. Assemble the pie: Transfer the beef and vegetable mixture into an oven-safe baking dish and evenly spread the 4 cups of mashed potatoes over the top as a crust.
  12. Bake: Place the assembled shepherd’s pie into the preheated oven and bake for 15-20 minutes, or until the mashed potato topping is golden and heated through.
