Ingredients

Marinade

  • ¼ cup oyster sauce
  • ¼ cup teriyaki sauce or soy sauce
  • 2 tablespoons ketchup
  • 2 tablespoons honey
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon Dijon mustard
  • ½ small yellow onion, peeled and sliced
  • 3 garlic cloves, minced
  • 2 teaspoons ginger, peeled and grated
  • ½ lemon, sliced
  • 1 tablespoon water

Instructions

  1. Prepare the marinade: In a medium bowl, combine oyster sauce, teriyaki sauce or soy sauce, ketchup, honey, chili garlic sauce, Dijon mustard, minced garlic, sliced onions, grated ginger, lemon slices, and 1 tablespoon water. Stir well to blend all ingredients. Reserve ¼ cup of this marinade separately and set aside for later use.
  2. Marinate the chicken: Thread the chicken chunks onto skewers. Place the skewers into a large resealable bag or shallow dish, pour the remaining marinade over the chicken, and seal or cover. Refrigerate and marinate for at least 2 hours, ideally up to 4 hours or overnight, turning occasionally to ensure even flavor absorption.
  3. Prepare the grill: Preheat your grill to medium heat. Brush the grill grates with 1 to 2 tablespoons of vegetable oil to prevent the chicken from sticking during cooking.
  4. Grill the skewers: Place the marinated chicken skewers on the grill. Cook for about 10 minutes, turning occasionally to promote even cooking. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C), indicating the chicken is fully cooked.
