These Three Ingredient Strawberry Mango Popsicles are a refreshing and healthy homemade treat combining fresh strawberries, ripe mangoes, and Simply Orange juice. Perfect for a hot day, they are naturally sweetened, easy to make, and have a delightful fruity swirl effect.

Ingredients

Fruits

  • 1 cup fresh strawberries, stems removed and hulled
  • 2 cups ripe mangoes, peeled and cubed (or 3 frozen, thawed mango chunks)

Juice

  • 1 cup Simply Orange Low Acid orange juice, divided

Instructions

  1. Blend Strawberries: In a blender, combine the strawberries with 1/4 cup of Simply Orange Low Acid orange juice and blend until completely smooth. Pour this strawberry mixture evenly among 8 popsicle molds.
  2. Blend Mangoes: Rinse out the blender to remove strawberry residue, then add the mango chunks along with the remaining 3/4 cup of orange juice. Blend until smooth. Pour the mango puree over the strawberry layer in the molds, filling them to the top.
  3. Create Swirl Effect: Using a knife, gently swirl some of the strawberry puree upwards into the mango layer for a beautiful marbled effect. Optionally, add a few thinly sliced strawberries into each mold for added texture and visual appeal.
  4. Initial Freeze: Place the molds in the freezer and freeze for 1 hour to allow the popsicle bases to firm up slightly.
  5. Insert Sticks: Remove molds from the freezer and carefully insert popsicle sticks into each mold.
  6. Final Freeze: Return the molds to the freezer and freeze until completely firm, approximately 4 additional hours.
  7. Remove Popsicles: To remove, run the molds under warm water for about 10 seconds to loosen the popsicles. Gently pull the popsicles out and store them in the freezer until ready to serve.

Notes

  • For best results, use ripe, fresh fruit or thawed frozen fruit for optimal sweetness and texture.
  • You can substitute the orange juice with any other citrus juice or fruit juice of your choice.
  • If you want to make the popsicles vegan-friendly, ensure the orange juice used is free from additives that may not align with vegan standards.
  • Make sure to swirl gently to avoid blending the two fruit purees completely.
