Ingredients

  • 1 medium zucchini – cut into 1-inch pieces

  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt

  • 1 package chicken sausage (12 oz) – robust Italian flavor

Instructions

  1. Prepare the Vegetables: Chop all the vegetables—red and orange bell peppers, red onion, and zucchini—into 1-inch pieces and place them into a large bowl.
  2. Season the Vegetables: Drizzle the veggies with 1 tablespoon of avocado oil and toss to coat evenly. In a smaller bowl, mix together the garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Sprinkle this spice blend over the veggies and toss to ensure every piece is well coated.
  3. Prepare the Sausage: Slice the chicken sausage into ¾ inch rounds. Add the sliced sausage to the bowl with the seasoned vegetables and toss everything together for an even distribution.
  4. Preheat and Prepare the Air Fryer: Preheat the air fryer to 390°F (if your model requires preheating). Lightly spray the air fryer basket with cooking spray to prevent sticking.
