Ingredients

Refried Bean Layer

  • 1 (16-ounce) can refried beans, or 2 cups homemade refried beans
  • ¾ cup salsa (divided)
  • ½ teaspoon sea salt (divided)

Guacamole Layer

  • 2 avocados
  • ½ cup chopped fresh cilantro (divided)
  • 2 jalapeño peppers, 1 finely chopped, 1 thinly sliced
  • 2 tablespoons fresh lime juice

Sour Cream Layer

  • 16 ounces sour cream
  • 1 (1-ounce) packet taco seasoning (approximately 3 tablespoons)

Toppings

  • 1½ cups grated sharp cheddar cheese
  • 1 roma tomato, diced
  • 1 bunch scallions, chopped
  • 1 (2.25-ounce) can sliced black olives, drained (optional)
  • Tortilla chips, for serving

Instructions

  1. Mix Refried Beans: In a medium bowl, combine the refried beans, ½ cup salsa, and ¼ teaspoon sea salt. Stir until well mixed to create a flavorful bean layer.
  2. Prepare Guacamole: In a separate medium bowl, mash the avocados. Add the remaining ¼ cup salsa, half of the chopped cilantro, finely chopped jalapeño, lime juice, and ¼ teaspoon sea salt. Stir gently to combine all ingredients into a smooth, tangy guacamole.
  3. Season Sour Cream: In another bowl, blend the sour cream with the taco seasoning packet until fully incorporated to create a flavorful creamy layer.
  4. Assemble the Dip: In an 8×8-inch baking or serving dish, spread the refried bean mixture evenly as the bottom layer. Follow by spreading the guacamole mixture evenly on top of the beans. Next, layer the seasoned sour cream mixture evenly over the guacamole.
  5. Add Cheese and Toppings: Sprinkle the grated sharp cheddar cheese evenly across the sour cream layer. Then add diced roma tomatoes, chopped scallions, thinly sliced jalapeño slices, the remaining chopped cilantro, and optional sliced black olives to complete the layered effect and add fresh flavors.
  6. Serve: Present the dip chilled or at room temperature, accompanied by tortilla chips for dipping. Enjoy immediately for best taste and texture.

Notes

  • For a homemade touch, use fresh refried beans instead of canned.
  • Adjust the amount of jalapeño to control the heat level.
  • This dip can be prepared a few hours ahead and refrigerated, but add fresh toppings just before serving.
  • Use a shallow dish for better layering and presentation.
  • For a spicier kick, add a dash of hot sauce to the sour cream mixture.
