Perfectly seasoned and air fried to tender, lightly browned perfection, it pairs beautifully with almost any meal and offers a nutritious way to enjoy your veggies with minimal effort.

Ingredients

Vegetables

  • 1 zucchini or yellow squash, cut into ½-inch half-moons
  • 1 red bell pepper, stemmed, seeded, and chopped into 1-inch pieces
  • 4 ounces cremini mushrooms, quartered
  • 1 small red onion, chopped into 1-inch pieces
  • 1 carrot, sliced into thin rounds
  • 1 heaping cup small broccoli florets
  • 1 heaping cup small cauliflower florets

Seasoning and Garnishes

  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • Lemon wedge, for squeezing
  • Grated Parmesan cheese, for serving (optional)
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 375°F to ensure it reaches the right temperature for evenly cooking the vegetables.
  2. Prepare Vegetables and Seasoning: In a large bowl, combine the zucchini, red bell pepper, cremini mushrooms, red onion, carrot, broccoli, and cauliflower. Add the olive oil, Italian seasoning, garlic powder, sea salt, and freshly ground black pepper. Toss thoroughly to evenly coat all the vegetables with the seasoning and oil.
  3. Air Fry Vegetables: Place a portion of the vegetables into the air fryer basket, ensuring they are in a single layer for optimal cooking. Air fry for 10 to 15 minutes (12 minutes recommended), tossing the vegetables halfway through to promote even browning and tenderness. Repeat this process with any remaining vegetables.
  4. Finish and Serve: Transfer the air fried vegetables to a serving dish. Squeeze fresh lemon juice over the top for brightness. Optionally, sprinkle with grated Parmesan cheese and garnish with chopped fresh parsley before serving.

Notes

  • For best results, avoid overcrowding the air fryer basket to ensure vegetables cook evenly and get nicely browned.
  • You can customize the seasoning to your taste by adding herbs like thyme or rosemary.
  • If you prefer a dairy-free version, skip the Parmesan cheese garnish.
  • Use a high-quality extra-virgin olive oil for the best flavor.
  • The cooking time may vary depending on your air fryer model and the thickness of the vegetable pieces; check for tenderness accordingly.
