Ingredients

Zucchini Fries

  • 3 medium zucchini
  • 1 tsp salt (adjust to taste)
  • 1 tsp ground black pepper (adjust to taste)
  • 1 tbsp Italian seasoning
  • 1/2 cup flour
  • 2 large eggs
  • 1 cup bread crumbs (panko or Italian bread crumbs)
  • 1/3 cup parmesan cheese
  • 2 tbsp spray oil

Instructions

  1. Prepare the Flour Mixture: On a large plate, combine the flour, salt, ground black pepper, and Italian seasoning. Mix well to ensure even distribution of the seasoning.
  2. Whisk the Eggs: In a small bowl, whisk the two large eggs together until fully combined. Set aside for dipping.
  3. Combine Bread Crumbs and Cheese: In a medium bowl, mix together the bread crumbs and grated Parmesan cheese to create the crispy coating mixture.
  4. Cut the Zucchini: Slice the zucchinis into 3-inch long sticks to resemble French fries.
  5. Bread the Zucchini Fries: Dip each zucchini stick first into the flour mixture, coating it completely, then into the whisked eggs, and finally into the bread crumb and Parmesan mixture, pressing gently to adhere well.
  6. Prepare the Air Fryer Basket: Lightly coat the air fryer basket with cooking spray to prevent sticking. Arrange the breaded zucchini fries in a single layer, making sure not to overcrowd them.
  7. Spray the Fries: Lightly spray the zucchini fries with the spray oil to ensure crispiness during air frying.
  8. Air Fry: Set the air fryer to 400°F (204°C) and cook the zucchini fries for 9 minutes, or until golden brown and crispy. Shake the basket halfway through cooking for even crisping.
