Delicious salmon rolls stuffed with creamy ricotta cheese and fresh asparagus, seared to a golden brown and baked to perfection. This elegant and healthy dish is perfect for impressing guests or enjoying a flavorful meal at home.

Ingredients

Salmon Rolls

  • 4 fillets salmon (skin removed)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh asparagus (trimmed)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to have it ready for baking the salmon rolls after searing.
  2. Prepare Filling: In a bowl, combine the ricotta cheese, grated Parmesan cheese, lemon zest, salt, and pepper. Mix thoroughly to create a flavorful filling.
  3. Assemble Rolls: Lay each salmon fillet flat and spoon about 2 tablespoons of the ricotta mixture along the center. Place 2-3 trimmed asparagus spears on top of the cheese mixture, then tightly roll the salmon from one end to the other. Secure with toothpicks if necessary.
  4. Sear Salmon Rolls: Heat olive oil in a skillet over medium heat. Carefully sear each salmon roll for 2-3 minutes per side, until the exterior is golden brown but not fully cooked inside.
  5. Bake Rolls: Transfer the seared salmon rolls to a baking dish and bake them in the preheated oven for 12-15 minutes. This step will cook the salmon through while keeping it moist and tender.
  6. Serve: Remove from the oven and allow to cool for a few minutes. Garnish with fresh parsley before serving to add a bright, fresh flavor and appealing presentation.

Notes

  • Be sure to trim the asparagus to fit comfortably inside the salmon fillets for easy rolling.
  • Using toothpicks helps keep the salmon rolls from unrolling during cooking.
  • You can substitute fresh herbs like dill or basil for parsley to vary the flavor profile.
  • Ensure not to overcook the salmon to maintain its moist texture.
  • This dish pairs well with a light citrus salad or steamed vegetables for a complete meal.
