  • 2 large eggs

Avocado Toast

  • 1 medium avocado, halved, peeled and pitted
  • 2 slices whole-grain bread, toasted
  • 1/4 teaspoon salt, divided
  • 1/4 teaspoon ground pepper, divided
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon crushed red pepper (optional)

Instructions

  1. Boil the eggs: Bring a small saucepan of water to a boil over high heat. Prepare a medium bowl filled with ice water and place it next to the stove for cooling the eggs after boiling.
  2. Cook the eggs: Gently lower the eggs into the boiling water using a spoon. Reduce the heat to maintain a gentle simmer and cook the eggs for exactly 7 minutes, stirring occasionally for even cooking.
  3. Cool the eggs: Transfer the eggs immediately from boiling water into the ice water bath. Let them stand in the ice water for 2 minutes to stop the cooking process and make peeling easier.
  4. Prepare the avocado: Place the avocado halves cut-side down on a cutting board. Slice each half lengthwise into approximately 1/4-inch-thick slices.
  5. Fan the avocado slices: Gently press each avocado half with your palm down and to the side to flatten and fan out the slices beautifully.
  6. Assemble the toast: Carefully transfer the fanned avocado slices onto each slice of toasted whole-grain bread. Sprinkle each avocado-covered toast with 1/8 teaspoon salt and 1/8 teaspoon ground pepper. Optionally drizzle a little extra-virgin olive oil and sprinkle crushed red pepper to taste for added flavor.
  7. Serve with soft-boiled eggs: Serve the avocado toast alongside the soft-boiled eggs for a balanced and hearty meal.
