Ingredients

Sweet Potatoes

  • 4 large sweet potatoes (about 2.53 lbs. or 1.3kg)

Coating & Seasoning

  • 12 Tablespoons cornstarch
  • 2 Tablespoons oil (avocado, sunflower, coconut, grapeseed, or olive oil)
  • 1/2 teaspoon salt
  • Optional seasonings: cayenne, chili powder, garlic powder, or paprika (amount to taste)

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (218°C). Line two large baking sheets with parchment paper or silicone baking mats to ensure the fries don’t stick and to make cleaning easier.
  2. Prepare the sweet potatoes: Wash and peel the sweet potatoes thoroughly. Using a very sharp knife, cut each sweet potato into thin sticks about 1/4-inch wide for even cooking. Pat the fries dry with paper towels or a clean towel—removing moisture is key for crispiness.
  3. Coat the fries: Place the cut sweet potatoes in a large bowl or a zip-top bag. Toss them with 1 to 2 tablespoons of cornstarch to lightly coat each fry. Pour the coated potatoes into a strainer to shake off any excess cornstarch, then discard the remaining cornstarch. Return the potatoes to the bowl and toss with 2 tablespoons of your chosen oil, 1/2 teaspoon salt, and any optional seasonings you prefer for extra flavor.
  4. Arrange on baking sheets: Spread the sweet potato fries in a single layer on the prepared baking sheets. Make sure there is space between each fry to allow for proper air circulation and crisping. Avoid crowding the fries.
  5. Bake and flip: Bake the fries for 15 minutes, then remove the trays from the oven. Flip each fry over carefully, rotate the pans, and switch rack positions to ensure even cooking. Return the fries to the oven and bake for an additional 10 to 15 minutes until they are crispy and golden brown.
