Blueberry Peach Feta Salad combines sweet blueberries and peaches with salty feta cheese, fresh cucumbers, and a zesty lemon basil vinaigrette. This refreshing and colorful summer salad offers a perfect balance of flavors and is quick to prepare, making it an ideal light side dish or snack.

Ingredients

Salad Ingredients

  • 1 pint fresh blueberries
  • 2 peaches, diced
  • 2 Persian cucumbers, sliced
  • 1/2 cup crumbled feta

Vinaigrette Ingredients

  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped basil
  • Kosher salt, to taste
  • Fresh ground black pepper, to taste

Instructions

  1. Combine the salad ingredients: In a large serving bowl, add the fresh blueberries, diced peaches, sliced Persian cucumbers, and crumbled feta cheese. Gently toss these ingredients together to evenly distribute.
  2. Make the vinaigrette: In a jar with a lid or a measuring cup, combine fresh lemon juice, Dijon mustard, honey, olive oil, finely chopped basil, kosher salt, and freshly ground black pepper. Shake the jar vigorously or whisk until the vinaigrette is emulsified and well combined.
  3. Toss salad with vinaigrette: Pour the prepared lemon basil vinaigrette over the salad in the bowl. Gently mix all the ingredients together to coat evenly without bruising the fruit or feta. Taste and adjust the seasoning if needed.
  4. Serve or refrigerate: Garnish the salad with extra basil leaves if desired and serve immediately. Alternatively, cover and refrigerate the salad until ready to serve to let the flavors meld.

Notes

  • Use ripe but firm peaches for the best texture.
  • For a vegan version, substitute feta with a plant-based cheese alternative.
  • The salad is best consumed within a few hours of preparation to maintain freshness.
  • Adjust honey amount based on the sweetness of your peaches and personal preference.
