Ingredients

Soba Noodles and Toppings

  • 6 ounces soba noodles
  • Lemon wedge, for squeezing
  • 2 avocados, sliced
  • 2 cups blanched snap peas
  • ¼ cup edamame
  • 1 watermelon radish, or 2 red radishes, very thinly sliced
  • ¼ cup fresh mint leaves
  • Sesame seeds, for garnish

Instructions

  1. Make the dressing: In a small bowl, whisk together the rice vinegar, tamari, toasted sesame oil, grated fresh ginger, grated garlic, and maple syrup or honey until fully combined. Set this bright and flavorful dressing aside.
  2. Cook the soba noodles: Bring a large pot of unsalted water to a boil. Add the soba noodles and cook according to the package instructions, typically about 5-7 minutes, until tender but still firm. Drain the noodles and rinse thoroughly under cold water to stop cooking and remove excess starch that causes clumping.
  3. Toss noodles with dressing: Place the rinsed soba noodles into a large bowl and toss them evenly with the prepared sesame dressing so every strand is coated in flavor.
  4. Assemble the bowls: Divide the dressed noodles into 2 to 4 serving bowls. Squeeze fresh lemon juice over the avocado slices to prevent browning and add them to the bowls.
