Ingredients

For the Tomato Mixture

  • 4 large ripe tomatoes (or 1 pint cherry tomatoes, quartered)
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil leaves, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • Salt and freshly ground black pepper, to taste

For the Bread

  • 1 baguette, cut into 24 small slices
  • 2 tablespoons olive oil (for brushing)

Instructions

  1. Prepare Tomatoes: If using large tomatoes, blanch them in boiling water for 30 seconds, then peel and chop into small pieces. For cherry tomatoes, simply quarter them. Place tomatoes in a mixing bowl.
  2. Mix Ingredients: Add minced garlic, thinly sliced fresh basil, olive oil, and balsamic vinegar (if using) to the tomatoes. Season with salt and pepper. Gently stir to combine and let the mixture marinate for at least 15 minutes to meld the flavors.
  3. Prepare Bread: Preheat the oven to 375°F (190°C). Arrange baguette slices on a baking sheet, brush both sides lightly with olive oil.
  4. Toast Bread: Bake the bread slices in the oven for about 10 minutes, flipping halfway through, until they are golden and crispy.
  5. Assemble Bruschetta: Spoon the tomato mixture generously over each toasted bread slice just before serving to keep the bread crisp.
  6. Serve: Arrange the bruschetta on a platter and optionally garnish with extra basil leaves. Serve immediately as a delicious appetizer.

Notes

  • Use any ripe, flavorful tomatoes you prefer; cherry tomatoes save time by removing the peeling step.
