These Caprese skewers are a vibrant, bite-sized twist on the classic Italian Caprese salad, perfect for summer gatherings. Featuring juicy cherry tomatoes, creamy mini mozzarella balls, and fragrant basil leaves, all drizzled with extra-virgin olive oil and balsamic reduction, they make a fresh, flavorful appetizer that’s quick to assemble and beautifully presented.

Ingredients

Skewers

  • 24 cherry tomatoes
  • 12 mini mozzarella balls
  • 24 fresh basil leaves

Seasoning & Dressing

  • Extra-virgin olive oil, for drizzling
  • Balsamic reduction, for drizzling
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Ingredients: Rinse the cherry tomatoes and basil leaves under cold water and pat dry. Drain the mini mozzarella balls from their liquid.
  2. Assemble the Skewers: Carefully thread one cherry tomato, followed by one mini mozzarella ball, then a basil leaf, and finish with another cherry tomato onto each mini skewer. Repeat until all ingredients are used.
  3. Season and Dress: Arrange the assembled skewers on a serving platter. Drizzle generously with extra-virgin olive oil and balsamic reduction. Sprinkle sea salt and freshly ground black pepper over the skewers to enhance the flavors.

Notes

  • Use fresh, high-quality ingredients for the best flavor.
  • Balsamic reduction can be homemade by simmering balsamic vinegar until thick and syrupy or store-bought for convenience.
  • These skewers can be pre-assembled and chilled for up to 1 hour before serving to keep them fresh.
  • Feel free to add a small piece of crusty bread on the skewer to make it more substantial.
  • For a vegan alternative, substitute mozzarella with marinated tofu or vegan cheese balls.
