Featuring golden caramelized onions, creamy lemon-infused ricotta, fresh figs, and a drizzle of honey atop toasted baguette slices, these crostini make an elegant appetizer or snack perfect for entertaining or a light bite.

Ingredients

For the Caramelized Onions:

  • 1 large Yellow Onion, thinly sliced
  • 3 tbsp Organic Valley Unsalted Butter
  • Salt, to taste
  • Black Pepper, to taste
  • ¼ cup Water

For the Crostini:

  • 1 large Artisanal Baguette, cut into ¾” slices
  • 2 tbsp Olive Oil
  • 1 cup Organic Valley Ricotta
  • Zest of 1 Lemon
  • Salt & Black Pepper, to taste
  • 5-6 Fresh Figs, thinly sliced
  • ¼ cup Honey, or substitute with hot honey
  • Optional: Fresh herbs like thyme, basil, or rosemary (for garnish)

Instructions

  1. Caramelize the Onions: In a large skillet over medium-high heat, melt 3 tablespoons of butter. Add the thinly sliced yellow onions and season with salt and black pepper. Cover and cook for 5-6 minutes until the onions soften. Then, stir in ¼ cup water to deglaze the pan. Reduce heat to medium and continue cooking the onions, stirring occasionally, until they are deeply caramelized and golden brown, about 10-15 more minutes.
  2. Prepare the Crostini: While the onions cook, preheat your oven to broil. Slice the artisanal baguette into ½-inch slices and place them on a parchment-lined sheet pan. Drizzle generously with olive oil. Broil the bread for 1-2 minutes per side, flipping once, until the slices are golden and crisp.
  3. Mix the Lemon Ricotta: In a bowl, combine the ricotta cheese with the zest of one lemon. Season the mixture with salt and black pepper to taste, mixing well to incorporate the flavors.
  4. Assemble the Crostini: Spread a generous layer of lemon ricotta onto each toasted baguette slice. Top with a spoonful of caramelized onions, followed by thin slices of fresh figs. Drizzle each crostini with honey or hot honey for a sweet finish. Optionally, garnish with fresh herbs such as thyme, basil, or rosemary for added aroma and flavor.
  5. Serve and Enjoy: Arrange the crostini on a serving platter and enjoy immediately as a sophisticated appetizer or snack that balances sweet, savory, and creamy elements perfectly.

Notes

  • Make sure to slice the onions thinly to ensure even caramelization.
  • Using fresh figs in season will enhance the sweetness and texture of the crostini.
  • Broiling the bread quickly crisps it without drying it out.
  • The lemon zest in the ricotta adds a bright, fresh contrast to the sweet onions and figs.
  • Honey can be substituted with hot honey for a spicy kick.
  • Feel free to garnish with fresh herbs to add a fragrant touch.
  • Serve immediately after assembling to maintain texture and flavor balance.
