Ingredients

Chicken and Pasta

  • 1 pound chicken breast, diced
  • 8 ounces pasta (penne or rotini preferred)

Sauce and Toppings

  • 1 cup Caesar dressing
  • 1 cup shredded parmesan cheese, divided
  • 2 cups romaine lettuce, chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: croutons for topping

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. Cook the chicken: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add diced chicken seasoned with salt and pepper. Cook for 6-8 minutes until golden brown and cooked through.
  3. Combine pasta and chicken: Once the chicken is done, add the drained pasta to the skillet. Pour in the Caesar dressing and stir well until everything is evenly coated. Heat for another 2-3 minutes, stirring occasionally.
  4. Add lettuce and cheese: Stir in the chopped romaine lettuce and half of the parmesan cheese. Mix until the lettuce wilts slightly and all ingredients are well combined.
  5. Serve: Plate the skillet pasta, topping with the remaining parmesan cheese and optional croutons. Serve immediately while hot.
