Delicious and easy Chicken Lettuce Wraps featuring ground chicken cooked with mushrooms, water chestnuts, and a savory hoisin-soy sauce blend, served in crisp Bibb lettuce cups for a fresh, light meal perfect for lunch or dinner.

Ingredients

Sauce

  • 3 to 5 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon cornstarch (optional)

Main Filling

  • 1 pound ground chicken
  • 2 teaspoons vegetable oil, divided
  • 8 ounces white button or cremini mushrooms, finely chopped
  • Optional vegetables: finely diced onions, finely diced bell peppers, finely diced or grated carrots
  • 1 (8-ounce) can water chestnuts, drained and finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon peeled and minced fresh ginger
  • 1/2 cup thinly sliced scallions (from about 6 scallions), divided

To Serve

  • 2 small heads Bibb or butter lettuce

Instructions

  1. Prepare the sauce: In a small bowl, combine 3 to 5 tablespoons hoisin sauce, 2 tablespoons soy sauce, 2 tablespoons rice vinegar, 1 teaspoon toasted sesame oil, and 1 teaspoon cornstarch if using. Mix well until smooth and set aside.
  2. Cook the chicken: Heat 1 teaspoon of vegetable oil in a large skillet over medium heat. Add the ground chicken and cook, breaking it up, until it is no longer pink, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté the vegetables: In the same skillet, add the remaining 1 teaspoon of vegetable oil. Stir in the finely chopped mushrooms, optional diced onions, bell peppers, and/or grated carrots. Cook until the vegetables soften and the mushrooms release their moisture, about 5 minutes.
  4. Add aromatics and water chestnuts: Stir in the minced garlic, minced fresh ginger, and chopped water chestnuts. Cook for another 2 minutes until fragrant.
  5. Combine chicken and sauce: Return the cooked ground chicken to the skillet. Pour the prepared sauce over the mixture, stirring well to combine. Let the filling simmer for 2 to 3 minutes until heated through and the sauce thickens slightly. Stir in half of the sliced scallions.
  6. Assemble the wraps: Remove the skillet from heat. Spoon the chicken mixture into individual lettuce leaves. Garnish with the remaining scallions on top.
  7. Serve: Serve the chicken lettuce wraps immediately to enjoy the fresh contrast of the savory filling and crisp lettuce.

Notes

  • You can adjust the amount of hoisin sauce based on preference for sweetness and tang.
  • Use Bibb or butter lettuce as they are tender and form perfect cups for the wraps.
  • The optional vegetables add great texture and color but can be omitted if desired.
  • For a gluten-free version, use gluten-free soy sauce and hoisin sauce.
  • If you want a spicier kick, add some chopped fresh chili or a dash of chili garlic sauce to the filling.
