  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Begin by boiling salted water in a large pot. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Heat Olive Oil: In a large skillet over medium heat, add olive oil. Allow it to warm up for a minute to prepare for sautéing.
  3. Sauté Chicken Sausages: Add the sliced chicken sausages to the skillet. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through. Remove them from the skillet and set aside.
  4. Add Vegetables: Using the same skillet, add diced zucchini. Sauté for 3-4 minutes until slightly softened but still retaining some crunch.
  5. Incorporate Garlic and Tomatoes: Add minced garlic and halved cherry tomatoes to the skillet. Continue to sauté for another 3-5 minutes until the tomatoes begin to break down and release their juices.
  6. Season the Mixture: Sprinkle in dried oregano and basil. Season with salt and pepper to taste, then stir well to evenly combine the flavors.
  7. Combine with Pasta: Add the drained pasta back into the skillet along with the cooked chicken sausages. Toss everything together thoroughly to ensure all ingredients are well mixed and coated with the aromatic sauce.
  8. Warm Through: Let the combined mixture heat through for 2-3 minutes, stirring occasionally so nothing sticks or burns.
  9. Garnish and Serve: Remove from heat. Sprinkle chopped fresh parsley over the top and add grated Parmesan cheese if desired. Serve immediately while warm.
