A delicious and smoky chipotle chicken avocado melt featuring smoked chicken breast, creamy avocado, melted cheese, and a tangy chipotle sauce, all toasted perfectly on sourdough bread for a quick and satisfying sandwich.

Ingredients

For the Sandwich:

  • 1 tablespoon olive oil
  • 2 slices sourdough bread
  • 1/4 avocado – sliced
  • 2 ounces smoked chicken breast – sliced
  • 3 Peppadew peppers – sliced
  • 1 tablespoon fresh chopped cilantro
  • 1 slice Chao creamy original cheese
  • 12 tablespoons chipotle sauce

For the Chipotle Sauce:

  • 1 tablespoon chipotle adobo sauce
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic – minced
  • 1/4 teaspoon coarse salt

Instructions

  1. Prepare Chipotle Sauce: In a small bowl, combine the chipotle adobo sauce, mayonnaise, lemon juice, minced garlic, and coarse salt. Stir until smooth and adjust seasoning to taste. Set aside.
  2. Heat Skillet and Prepare Bread: Heat a large skillet over medium-high heat. Brush olive oil onto the outer side of each slice of sourdough bread to ensure a golden, crispy crust.
  3. Assemble Sandwich: Place one slice of bread oil-side down in the skillet. Layer with the slice of Chao creamy original cheese first, followed by smoked chicken breast slices, sliced avocado, Peppadew peppers, fresh cilantro, and a generous spread of the chipotle sauce on the inside of the second slice of bread.
  4. Cook and Melt Cheese: Place the second slice of bread on top with the chipotle sauce side facing inward. Cook until the bottom slice is golden brown and the cheese has melted, which should take about 2-3 minutes.
  5. Flip and Toast: Carefully flip the sandwich to cook the other side until it is toasted and golden brown, ensuring the sandwich is heated through and the flavors meld together.
  6. Serve: Remove the sandwich from the skillet, slice it in half, and serve immediately to enjoy the melty, smoky, and spicy flavors.
