These Chipotle Steak Kebabs combine tender sirloin steak, colorful vegetables, and sweet pineapple chunks grilled to perfection and served with a creamy, smoky chipotle sauce. Ingredients

For the Marinade:

  • ¼ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon chipotle sauce (such as La Costena)
  • ¾ teaspoon kosher salt
  • ¼ teaspoon dried oregano
  • ¾ teaspoon honey

For the Kebabs:

  • 2 pounds sirloin steak, trimmed
  • 1 red onion
  • 2 colored bell peppers
  • 4 cups pineapple chunks
  • Wooden skewers

For the Chipotle Sauce:

  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • 1½ tablespoons chipotle sauce
  • ¾ teaspoon kosher salt
  • ¼ teaspoon oregano
  • ¾ teaspoon honey

Instructions

  1. Soak the Skewers: Place wooden skewers in a shallow dish filled with water to soak for at least 30 minutes. This prevents them from burning on the grill.
  2. Prepare the Steak: Trim excess fat, silver skin, and gristle from the sirloin steak. Cut the steak into 1 ¼ inch cubes to ensure even grilling without overcooking.
  3. Make the Marinade: In a large bowl, whisk together olive oil, red wine vinegar, chipotle sauce, kosher salt, dried oregano, and honey. Add the steak cubes, toss to coat evenly, cover, and refrigerate for at least 30 minutes and up to 2 hours, stirring halfway through.
  4. Prepare Vegetables: Peel and chunk the red onion. De-seed and cut the bell peppers into 1 ¼ inch pieces. Toss all veggies with a little olive oil and kosher salt for seasoning.
  5. Assemble Kebabs: Thread the marinated steak cubes, vegetables, and pineapple chunks onto the soaked wooden skewers, alternating ingredients. Leave a small space between pieces to ensure even cooking.
  6. Preheat the Grill: Heat the grill to medium-high until very hot and ready for cooking.
  7. Make the Chipotle Sauce: In a medium bowl, combine sour cream, mayonnaise, chipotle sauce, kosher salt, oregano, and honey; stir well and set aside.
  8. Grill the Kebabs: Place the skewers on the hot grill. Cook, turning every couple of minutes, until the steak is nicely caramelized on the outside but still pink inside—about 8 minutes total.
  9. Serve: Remove the kebabs from the grill, let rest briefly, and serve with the prepared chipotle sauce for dipping.

Notes

  • Chipotle sauce is pureed chipotles in adobo. If unavailable, you can puree chipotles in adobo sauce yourself or finely chop a chipotle pepper to use.
