This Cinnamon Donut Bread is a moist and tender loaf that captures the nostalgic flavors of a cinnamon sugar donut without the need for deep frying. Finished with a crunchy cinnamon sugar topping, it makes a perfect breakfast, dessert, or snack treat.

Ingredients

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp ground cinnamon

Topping

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a standard loaf pan to prevent sticking.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and 1 cup of sugar until the mixture is light and fluffy, which helps create a tender crumb.
  3. Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition to incorporate air. Stir in the vanilla extract for flavor.
  4. Combine with Milk: Gradually add the whole milk, mixing until the batter is smooth and combined.
  5. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and 1 tablespoon of cinnamon to evenly distribute the leavening and spice.
  6. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing just until combined to avoid overmixing, which can make the bread tough.
  7. Pour Batter and Add Topping: Pour the batter into the prepared loaf pan and smooth the top with a spatula. In a small bowl, mix together 1/4 cup sugar and 1 teaspoon cinnamon, then sprinkle this mixture evenly over the batter.
  8. Bake: Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted into the center comes out clean indicating doneness.
  9. Cool: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • This bread tastes just like a cinnamon donut in loaf form with a crusty sugar topping that perfectly mimics the sugary glaze.
  • For an extra indulgent touch, brush the bread with melted butter right after removing it from the oven, then sprinkle more cinnamon sugar on top for added richness and crunch.
