These Coconut Mango Popsicles are a refreshing tropical treat that’s easy to prepare and perfect for summer. Featuring layers of sweet mango puree and creamy coconut puree with a hint of yogurt, these popsicles deliver a delightful balance of flavors and textures in just 10 minutes of prep time and a few hours of freezing.

Ingredients

Mango Puree:

  • 2 ½ cups mango chunks, fresh or frozen
  • ½ cup pineapple juice, or mango juice

Coconut Puree:

  • 1 cup canned coconut milk, full-fat, unsweetened
  • 2 Tablespoons granulated sugar, or choice of sweetener
  • 2 Tablespoons yogurt
  • 2 Tablespoons water

Instructions

  1. Prepare Mango Puree: In a blender or food processor, puree mango chunks and pineapple juice until smooth. Transfer the mango puree to a bowl and set aside.
  2. Make Coconut Puree: In a separate bowl, combine the canned coconut milk, granulated sugar, yogurt, and water. Stir thoroughly until the mixture is homogeneous.
  3. Layer First Mango Puree: Pour 2 tablespoons of mango puree into each popsicle mold. Place the molds in the freezer for 15 minutes until the puree is almost solid.
  4. Add Coconut Layer: Remove the molds from the freezer and add 1 tablespoon of the coconut puree to each mold. Return the molds to the freezer for 10 minutes to set.
  5. Second Mango Layer and Insert Sticks: After 10 minutes, add 1 tablespoon of mango puree to each mold. Insert wooden sticks into the molds and freeze for another 10 minutes.
  6. Top with Remaining Coconut Puree: Pour the remaining coconut puree into each mold until the liquid reaches the top. Return the molds to the freezer and freeze for at least 4 hours to fully set.
  7. Release and Serve: To remove the popsicles from the molds, submerge the molds in room temperature water for 60-90 seconds. Pull the popsicles out gently and enjoy immediately.

Notes

  • Highly recommend using Philippine or Manila mangos. Ataulfo (honey mangoes) and Champagne mangoes are excellent alternatives. If unavailable, frozen mango chunks, such as Atkins or Kent varieties, work well.
  • Popsicles keep well in the freezer for up to two weeks but may absorb freezer odors over time.
  • For variation, instead of layering, try swirling the mango and coconut purees or mixing them together for a marbled effect.
