This refreshing Coconut Mojito combines the classic tangy lime and mint flavors of a traditional mojito with the creamy sweetness of coconut rum and coconut cream, creating a tropical twist on a beloved cocktail. Perfect for a quick 10-minute preparation, it balances zesty citrus, fresh mint, and smooth coconut for a delightfully cool and flavorful drink.

Ingredients

Lime Sugar

  • Zest of 1 lime
  • 2 tablespoons sugar
  • Flaky sea salt, as needed

Mojito

  • 1 lime, quartered
  • 8 fresh mint leaves
  • 1 to 2 teaspoons sugar (optional)
  • 1½ ounces (3 tablespoons) white rum
  • ½ ounce (1 tablespoon) coconut rum
  • Dash of pure vanilla extract
  • 2 ounces (1/4 cup) canned coconut cream or cream of coconut

Instructions

  1. Prepare Lime Sugar: In a small bowl, mix the zest of 1 lime with 2 tablespoons of sugar and a pinch of flaky sea salt. Set aside this aromatic lime sugar to rim your glass later.
  2. Muddle Lime and Mint: In a sturdy glass, add the quartered lime pieces, fresh mint leaves, and optional sugar (1 to 2 teaspoons). Using a muddler or the back of a spoon, gently press and twist the ingredients together to release the lime juice and mint oils without shredding the mint leaves.
  3. Add Rums and Vanilla: Pour in 1½ ounces of white rum, ½ ounce of coconut rum, and add a dash of pure vanilla extract into the muddled mixture, stirring gently to combine the flavors.
  4. Incorporate Coconut Cream: Add 2 ounces of canned coconut cream or cream of coconut to the glass. Stir well to integrate the creamy texture with the rum and citrus components.
  5. Prepare Glass Rim: Rub a lime wedge around the rim of a serving glass, then dip the rim into the prepared lime sugar to coat it with the zesty sugar and salt mixture.
  6. Assemble Drink: Fill the rimmed glass with ice cubes and carefully strain the mojito mixture into the glass over the ice. Garnish with additional fresh mint sprigs and a slice of lime if desired.
  7. Serve: Serve immediately and enjoy this tropical, creamy twist on the classic mojito cocktail.

Notes

  • Adjust the sweetness by increasing or omitting the optional sugar based on your taste.
  • Using fresh lime and mint is essential for authentic flavor.
  • Canned coconut cream or cream of coconut provides the signature creamy coconut flavor—choose based on preference for sweetness.
  • For a non-alcoholic version, substitute the rums with sparkling water or coconut-flavored soda.
  • If you prefer a stronger mint flavor, gently slap the mint leaves before muddling to release more aroma.
