Ingredients

Cheese Filling

  • 15 oz. ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper

Meat Sauce

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • ½ lb. ground beef
  • ½ lb. ground Italian sausage (hot or mild)
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 32 oz. marinara sauce
  • 1 teaspoon Worcestershire sauce (optional)
  • 1 teaspoon hot sauce (optional)

Lasagna

  • 12 lasagna noodles, plus extra in case of breakage
  • 1.5 cups shredded mozzarella cheese

Instructions

  1. Prepare Cheese Filling: In a medium bowl, combine ricotta cheese, egg, 2 cups mozzarella, Parmesan, oregano, salt, basil, parsley, and black pepper. Mix well and set aside.
  2. Prepare Baking Dish: Pour ½ cup marinara sauce evenly on the bottom of a 9 x 13-inch casserole dish and spread it to cover the base.
  3. Preheat Oven and Boil Water: Preheat your oven to 375°F (190°C) and bring a large pot of salted water to a boil for the noodles.
  4. Cook Onions: Heat olive oil in a large pan over medium heat. Add diced onions and cook for about 10 minutes until softened and slightly caramelized to offset tomato acidity.
  5. Cook Meat: Add ground beef and Italian sausage to the pan. Increase heat to medium-high, breaking the meat up finely with a spatula. Cook 8-10 minutes until browned and cooked through. Add minced garlic in the last minute. Drain excess fat.
  6. Add Liquids and Simmer Sauce: Pour in chicken broth and use a silicone spatula to scrape the bottom and sides to deglaze. Add remaining marinara sauce, Worcestershire sauce, and hot sauce if using. Bring to a boil, then reduce heat to simmer gently.
  7. Cook Lasagna Noodles: Boil the lasagna noodles until al dente according to package instructions. Drain and rinse with cold water to stop cooking and make them easier to handle. Lay noodles flat on parchment or wax paper.
  8. Assemble Roll Ups: Evenly spread about 2 ½ tablespoons of the cheese mixture over each noodle. Then spread ¼ cup of meat sauce on each noodle (use a total of 3 cups sauce here, reserving the rest). Roll noodles tightly while keeping the filling inside and place seam side down in the prepared baking dish.
  9. Add Sauce and Cheese: Pour the remaining meat sauce over the rolled noodles. Sprinkle the top with the remaining 1.5 cups shredded mozzarella cheese.
  10. Cover and Bake: Spray a piece of foil with nonstick cooking spray and place it spray side down over the dish to prevent sticking. Bake in the preheated oven for 35 minutes.
  11. Optional Broil: For a browned top, remove the foil and broil at 450°F (232°C) for a few minutes, watching carefully to prevent burning.
