Pasta

Salmon

  • 1 lb salmon fillets (skinless)
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil

Creamy Sauce

  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/4 cup fresh dill (chopped, plus extra for garnish)
  • 1/2 cup grated Parmesan cheese (plus more for serving)

Instructions

  1. Cook the Pasta: Boil salted water in a large pot and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain and set the pasta aside.
  2. Prepare the Salmon: Season the salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium heat and cook the salmon for 4-5 minutes per side until cooked through and flaky. Remove salmon from the skillet and set aside.
  3. Make the Creamy Sauce: In the same skillet, sauté the minced garlic for about 30 seconds until fragrant. Add the heavy cream, chicken or vegetable broth, Dijon mustard, and lemon juice. Stir and bring to a simmer. Add the chopped dill and grated Parmesan cheese and cook until the sauce thickens slightly. If too thick, adjust consistency by adding reserved pasta water.
  4. Combine and Serve: Flake the cooked salmon into bite-sized pieces and fold gently into the sauce. Add the cooked pasta and toss to coat evenly. Divide among plates and garnish with additional fresh dill and Parmesan cheese as desired.
