Ingredients

Jalapeños

  • 1/3 cup pickled jalapeños
  • 3 – 4 tbsp roughly chopped fresh jalapeños (white membrane and seeds removed)

Dairy & Condiments

  • 1/3 cup sour cream
  • 1/3 cup whole-egg mayonnaise or kewpie

Herbs & Aromatics

  • 1/3 cup tightly packed coriander/cilantro leaves (including some stems)
  • 1 small garlic clove

Other

  • 2 tsp lime juice
  • 1/4 tsp cooking salt / kosher salt (add more if using fresh jalapeños)

Instructions

  1. Prepare Ingredients: Gather all ingredients. Remove the white membrane and seeds from the fresh jalapeños to soften the heat if desired.
  2. Blend Jalapeños and Seasoning: Place the pickled jalapeños, fresh jalapeños, cilantro leaves, garlic clove, lime juice, and salt into a jug suitable for blending. Use a stick blender to blitz the mixture until completely smooth, ensuring all flavors are thoroughly combined.
  3. Incorporate Sour Cream: After blending, gently stir in the sour cream to create a creamy consistency without over-blending.
  4. Taste and Adjust: Taste the sauce and add more salt or lime juice as needed to balance the flavors to your preference.
  5. Serve or Store: Serve immediately or refrigerate in an airtight container for up to 3 days for the flavors to meld beautifully.
