A delicious and creamy twist on the famous Korean buldak carbonara instant ramen noodles, combining spicy buldak flavors with a smooth egg-based sauce for a rich and satisfying meal.

Ingredients

Noodles

  • 2 packages of buldak carbonara noodles

Sauce

  • 2 teaspoons of toasted sesame oil
  • 2 tablespoons of Kewpie mayonnaise
  • 2 egg yolks
  • 4 tablespoons of boiling noodle water
  • 2 noodle seasoning packets (from the buldak carbonara packages)

Toppings

  • Green onions, thinly sliced
  • Parmesan cheese, grated
  • Furikake (optional)

Instructions

  1. Boil the noodles: Bring water to a boil and cook the buldak carbonara noodles for 5 minutes until tender.
  2. Prepare the sauce: In a bowl, combine the toasted sesame oil, Kewpie mayonnaise, egg yolks, and the two noodle seasoning packets. Mix thoroughly to combine all ingredients evenly.
  3. Incorporate the noodle water: Carefully stir in 4 tablespoons of boiling noodle water into the sauce mixture quickly to prevent the egg yolks from cooking and to achieve a smooth, silky consistency.
  4. Drain and combine: Drain the cooked noodles and immediately add them to the sauce mixture. Toss well to ensure the noodles are evenly coated with the creamy sauce.
  5. Garnish and serve: Plate the noodles and top with thinly sliced green onions, grated Parmesan cheese, and a sprinkle of furikake if desired. Serve immediately for the best flavor and texture.
