Ingredients

Chicken

  • 2 large boneless, skinless chicken breasts

Sauce

  • 10.5 oz. cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream, at room temperature
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix

Instructions

  1. Season and Slice the Chicken: Slice each chicken breast into 2-3 thinner pieces, aiming for approximately ½ inch thickness. Use a meat tenderizer if needed to even out the thickness, which helps the chicken cook evenly and stay juicy.
  2. Prepare the Chicken for Cooking: Pat the chicken slices completely dry with paper towels. Sprinkle both sides evenly with Italian seasoning and salt and pepper to taste. Brush one side of each piece with melted butter, ensuring the butter is not too hot to avoid cooking the chicken prematurely.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken slices in batches, being careful not to overcrowd the pan. Cook each side for 4-5 minutes until a golden brown crust forms. Once seared, remove the chicken from the skillet and set it aside.
  4. Make the Sauce: Reduce heat to medium and add cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning mix to the same skillet. Stir the sauce ingredients together until smooth and well combined. Let it bubble gently and reduce for about 5 minutes to thicken slightly.
  5. Combine and Simmer: Return the seared chicken to the skillet, spoon the sauce over the chicken pieces. Partially cover the skillet and let everything simmer together for approximately 10 minutes, allowing the chicken to heat through and soak up the rich sauce flavors.
  6. Serve: Serve the creamy ranch chicken hot, optionally with baked potatoes and vegetables. Spoon extra sauce over the potatoes for added flavor.
