This creamy Tuscan gnocchi is a delightful one-pan meal featuring golden sautéed gnocchi in a rich sauce with sun-dried tomatoes, spinach, garlic, and Parmesan. Perfect for a quick and comforting Italian-inspired dinner that comes together in just 20 minutes.

  • 1 pound gnocchi, uncooked
  • ¼ cup sun-dried tomatoes, chopped
  • ½ teaspoon Italian seasoning

  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup heavy cream
  • ½ cup vegetable stock
  • ¼ cup Parmesan cheese, grated
  • 3 cups baby spinach
  • 2 tablespoons fresh basil, finely sliced

Instructions

  1. Heat Butter: Melt butter in a large skillet over medium-high heat until bubbly, about 1 minute, preparing the base for sautéing.
  2. Sauté Gnocchi and Garlic: Add finely chopped garlic and uncooked gnocchi to the skillet. Sauté them until the gnocchi turns golden brown on most sides, approximately 5 minutes. Note that gnocchi doesn’t need to be fully cooked through at this stage.
  3. Add Seasonings and Tomatoes: Mix in the chopped sun-dried tomatoes, Italian seasoning, crushed red pepper, salt, and black pepper. Cook for an additional 2-3 minutes until the ingredients are fragrant.
  4. Create and Simmer Sauce: Pour in heavy cream, vegetable stock, and grated Parmesan cheese. Stir well and bring the mixture to a gentle simmer. Then reduce the heat to medium and continue cooking, stirring frequently, until the sauce thickens and the gnocchi is cooked through, about 2-3 minutes.
  5. Add Spinach: Stir in the baby spinach and cook until it wilts, approximately 1 minute, incorporating freshness and color.
  6. Garnish and Serve: Remove from heat, garnish with fresh basil, and serve the creamy Tuscan gnocchi immediately for best taste and texture.

Notes

  • How to Store: Keep any leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing as creamy sauces may separate and gnocchi texture can become mushy upon thawing.
