These juicy and crispy taco-seasoned air fryer chicken bites are quick and easy to prepare, requiring no breading or marinating. Perfectly seasoned with bold taco flavors and cooked to perfection in the air fryer, they are an ideal healthy meal prep option that comes together in just 20 minutes.

Ingredients

Chicken and Seasoning

  • 2 lbs boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1½ tbsp taco seasoning
  • 1 tbsp lime juice (optional)

Instructions

  1. Prepare the Chicken: Cut the chicken thighs into bite-sized pieces about 2 inches each and place them in a mixing bowl.
  2. Season the Chicken: Add olive oil, taco seasoning, and lime juice to the bowl with the chicken. Toss everything together until the chicken pieces are evenly coated with the seasoning mixture.
  3. Preheat the Air Fryer: Preheat your air fryer to 400°F (204°C) for 3 to 5 minutes to ensure even cooking.
  4. Arrange Chicken in Air Fryer: Place the seasoned chicken pieces in a single layer inside the air fryer basket. If necessary, cook in batches to avoid overcrowding.
  5. Air Fry the Chicken: Cook the chicken bites at 400°F for 12 to 15 minutes. Shake the basket halfway through the cooking time to promote even crisping. The chicken is done when it is cooked through and lightly crispy on the edges.
  6. Serve: Remove the chicken bites from the air fryer and serve immediately for best flavor and texture.

Notes

  • Do not overcrowd the air fryer basket to ensure the chicken cooks evenly and crisps well.
  • Lime juice is optional but adds a nice tangy brightness to the flavor.
  • Use fresh taco seasoning or your favorite store-bought blend for best results.
  • Chicken thighs are preferred for juiciness, but boneless skinless chicken breasts can be used as a leaner alternative with slightly adjusted cooking time.
  • Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C) for food safety.
