Ingredients

For the Crispy Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • Oil for frying (vegetable or canola oil)

For the Caesar Salad:

  • 2 cups romaine lettuce, chopped
  • ¼ cup Parmesan cheese (shaved or grated)
  • ¼ cup Caesar dressing (store-bought or homemade)
  • ½ cup croutons (optional)

For the Sandwich:

  • 4 slices bread (ciabatta, baguette, or your choice)
  • Additional Caesar dressing for spreading (optional)

Instructions

  1. Prepare the Crispy Chicken: Place chicken breasts between two sheets of plastic wrap or parchment paper and pound them to an even thickness of about ½ inch using a meat mallet or rolling pin. In a shallow dish, combine all-purpose flour with garlic powder, paprika, salt, and black pepper. Beat eggs in a separate bowl. Place panko breadcrumbs in another shallow dish. Dredge each chicken breast in the seasoned flour, shaking off excess, then dip into the beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.
  2. Cook the Chicken: Heat about ½ inch of oil in a large skillet over medium-high heat until shimmering. Carefully add the breaded chicken breasts and fry for 4-5 minutes per side, or until golden brown and cooked through; internal temperature should reach 165°F (75°C). Remove chicken and drain on paper towels.
  3. Prepare the Caesar Salad: In a large bowl, toss together chopped romaine lettuce, Parmesan cheese, Caesar dressing, and croutons (if using) until well coated.
  4. Assemble the Sandwich: Lightly toast the bread slices in the skillet or oven, if desired. Spread additional Caesar dressing on the bread if desired. Place a crispy chicken breast on one slice, top with a generous amount of Caesar salad, and cover with another bread slice.
  5. Serve: Cut the sandwich in half and serve immediately while the chicken is still warm and crispy. Enjoy your Crispy Chicken Caesar Sandwich!

Notes

  • Use a meat thermometer to ensure chicken is cooked safely to 165°F (75°C).
  • For extra flavor, marinate chicken in buttermilk for 1-2 hours before breading.
  • Croutons are optional but add a great crunchy texture to the salad.
  • Feel free to substitute Caesar dressing with a lighter yogurt-based dressing for a lower-fat option.
  • Leftover sandwich can be wrapped and refrigerated for up to 1 day but is best enjoyed fresh.
