Ingredients

Carrots

  • 1 pound carrots, peeled and ends trimmed

Seasoning & Coating

  • 1 1/2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pinch ground cayenne (optional)

Cheese & Garnish

  • 1 cup (3 ounces) finely-grated Parmesan cheese, divided
  • Chopped fresh parsley, for serving (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (204°C) and line a rimmed baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare the Carrots: Cut the peeled carrots into flat sticks (batons) about 2 inches long and between 1/4 to 3/8-inch thick. Place them in a large mixing bowl as you cut.
  3. Toss with Seasonings: Add olive oil, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper if using, to the bowl with carrots. Toss well until the carrots are evenly coated with the oil and spices. Then add 2 tablespoons of the finely grated Parmesan cheese and toss gently until the cheese sticks evenly to the carrot pieces.
  4. Prepare Baking Sheet: Spread the remaining Parmesan cheese evenly over the parchment-lined baking sheet to form a cheese layer.
  5. Arrange Carrots: Place the carrots flat side down over the Parmesan cheese layer in a single even layer to ensure they roast evenly. Scrape any remaining oil and seasoning mixture from the bowl and drizzle it evenly over the arranged carrots.
  6. Roast the Carrots: Place the baking sheet into the preheated oven and roast for approximately 25 minutes, or until the carrots are fork-tender and the Parmesan has formed a crispy, golden crust.
  7. Serve: Remove from the oven and optionally sprinkle with chopped fresh parsley before serving to add a fresh, vibrant touch.
