This recipe transforms classic smash burgers into flavorful taco fillings by cooking thin, crispy beef patties that fit perfectly inside soft small tortillas. The smashing technique maximizes crust and flavor while ensuring juicy, quick-cooking patties. Complemented with flexible toppings ranging from traditional taco ingredients to creative sauces, these smash burger tacos offer a delicious, fast, and adaptable meal option.

Ingredients

For the Smash Burger Patties

  • 1 lb ground beef (80/20 blend)
  • Salt, to taste
  • Black pepper, to taste
  • 6 small soft tortillas (6-inch diameter)

Optional Toppings

  • Pepper jack cheese, shredded
  • Sharp cheddar cheese, shredded
  • Monterey Jack cheese, shredded
  • Fresh cilantro leaves
  • Lime wedges
  • Creamy garlic sauce or preferred taco sauce
  • Diced onions
  • Diced tomatoes
  • Shredded lettuce

Instructions

  1. Prepare the skillet: Preheat a heavy skillet or cast-iron pan over high heat until very hot to ensure maximum searing during cooking.
  2. Form and smash patties: Divide the ground beef into small balls slightly smaller than the tortilla size. Place one ball in the skillet and use a sturdy spatula or flat tool to press down firmly but carefully to flatten the beef into a thin patty without breaking apart.
  3. Season patties: Lightly sprinkle salt and pepper on the exposed side of each patty immediately after smashing to enhance flavor.
  4. Cook patties: Let patties cook without moving for about 2 minutes or until the edges become deeply browned and crispy. Flip carefully and cook for an additional 1-2 minutes to reach desired doneness.
  5. Rest patties: Remove patties from heat and allow them to rest for a minute off the skillet to retain their juiciness and finish cooking.
  6. Warm tortillas: While patties rest, warm tortillas briefly in a dry skillet or microwave until soft and pliable.
  7. Assemble tacos: Place one patty in each tortilla and add your choice of cheese, fresh cilantro, a squeeze of lime, and preferred toppings like diced onions, tomatoes, lettuce, and a light drizzle of creamy garlic or taco sauce to avoid sogginess.
  8. Serve immediately: Enjoy tacos hot for best texture and flavor. Optionally pair with a quick side like shrimp and broccoli stir fry for extra protein and veggies.

Notes

  • Use small, soft tortillas (6-inch diameter) to fit the thin patties perfectly.
  • Do not over-press patties to avoid breaking apart; a firm, quick smash is sufficient.
  • Ensure the skillet is very hot to develop a maximum crust on the patties.
  • Lighten sauce application to prevent soggy taco shells.
  • Prepare all toppings ahead of time for seamless assembly.
  • Patties can be cooked ahead and reheated in a hot skillet but assemble tacos fresh for the best experience.
