This easy broccoli slaw recipe is a fresh, crunchy side dish perfect for picnics and summer cookouts. Featuring julienned broccoli stems and florets, carrots, red cabbage, red onion, toasted almonds, and dried cranberries, all tossed in a tangy coleslaw dressing, this salad is both colorful and flavorful. It’s quick to prepare and can be easily adapted using store-bought broccoli slaw.

Ingredients

Vegetables

  • 3 cups julienned broccoli stems
  • 2 cups small broccoli florets
  • 1 cup julienned carrots
  • 1 cup sliced red cabbage
  • ¼ cup thinly sliced red onion

Add-ins

  • ½ cup toasted sliced almonds, reserve some for garnish
  • ⅓ cup dried cranberries, reserve some for garnish

Dressing

  • 1 recipe Coleslaw Dressing, omit the celery seed

Instructions

  1. Combine Ingredients: In a large bowl, mix together the broccoli stems, broccoli florets, julienned carrots, sliced red cabbage, thinly sliced red onion, toasted sliced almonds, and dried cranberries.
  2. Add Dressing and Toss: Drizzle about three quarters of the coleslaw dressing over the mixture and toss everything well to coat the vegetables and nuts evenly. Add more dressing to taste if desired.
  3. Garnish and Serve: Reserve some almonds and dried cranberries for garnish. Sprinkle these on top just before serving to add a decorative touch and extra crunch.

Notes

  • For a shortcut, you can use a 12- to 16-ounce bag of store-bought broccoli slaw instead of julienned broccoli stems, florets, carrots, and cabbage.
  • Adjust the amount of dressing according to your personal preference for creaminess and flavor intensity.
  • This slaw is best served fresh but can be refrigerated for up to 1 day to allow flavors to meld.
