Ingredients

For the veggies & chicken:

  • 1 tbsp olive oil
  • 2 red onions, cut into wedges
  • 3 bell peppers (red, yellow, orange or green), cut into strips
  • 18 oz (500g) chicken breast, cut into strips
  • 1 tbsp cornstarch
  • 1 tsp chili powder
  • 1 tsp smoked paprika powder
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/4 tsp sugar
  • Salt and pepper, to taste

For the fajitas:

  • 4 flour tortillas (or more)
  • 1 avocado, sliced
  • Some cooked or fried rice (e.g., seasoned rice)
  • Some sour cream
  • Some grated cheese
  • Fresh coriander, chopped
  • 1 lime, cut into wedges

Instructions

  1. Prepare the veggies and chicken: Peel the onions, halve them, and cut into wedges. Clean and deseed the bell peppers, then cut them into thin strips. Place all the vegetables in a large bowl. Clean the chicken breasts and cut into medium strips. Add the chicken to the bowl with the vegetables.
  2. Season the mixture: In a small bowl, mix the cornstarch with chili powder, smoked paprika, dried oregano, garlic powder, onion powder, ground cumin, cayenne pepper, sugar, salt, and pepper. Add this spice mix to the bowl with the chicken and vegetables, drizzle with olive oil, and toss everything together until well coated.
  3. Preheat the air fryer: If necessary, preheat your air fryer to 190°C (375°F). This ensures even cooking and a nice crisp texture.
  4. Cook in the air fryer: Place the seasoned chicken and vegetable mixture evenly in the air fryer basket without overcrowding. Cook for 15-16 minutes, shaking or flipping the basket occasionally to ensure even cooking. If your air fryer basket is small, cook in two batches.
  5. Serve the fajitas: Warm the flour tortillas. Serve the cooked chicken and veggies with the tortillas, sliced avocado, cooked or fried rice, sour cream, grated cheese, and chopped fresh coriander.
