Tender and lightly caramelized roasted zucchini slices made with simple pantry seasonings, perfect as a quick and healthy side dish for any meal.

Ingredients

  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and dry the zucchini, then slice them into even 1/4-inch thick rounds.
  3. Place the zucchini slices in a large bowl and drizzle with olive oil.
  4. Add garlic powder, Italian seasoning, salt, and black pepper. Toss until evenly coated.
  5. Arrange the slices in a single layer on the prepared baking sheet, ensuring they do not overlap.
  6. Sprinkle grated Parmesan cheese over the top if using.
  7. Roast for 18–22 minutes, until tender and lightly golden.
  8. For extra browning, broil for 2–3 minutes at the end, watching carefully.
  9. Remove from the oven and serve immediately.
