Instructions

  1. Preheat and melt butter: Preheat your oven to 350°F (175°C). Place ½ cup of butter in a 9×13 inch baking dish and put it in the oven to melt while you prepare the batter and filling. This step ensures crispy golden edges on your cobbler.
  2. Make the batter: In a medium mixing bowl, whisk together 1 cup self-rising flour, ¾ cup granulated sugar, and 1 cup whole milk until smooth. A few small lumps are okay.
  3. Prepare banana mixture: Slice 4-5 ripe bananas into rounds. In a separate bowl, gently toss banana slices with ½ cup packed brown sugar, 1 teaspoon ground cinnamon, 1 teaspoon vanilla extract, and a pinch of salt. This soft banana mixture is easy to handle and mix.
  4. Assemble the cobbler: Remove the baking dish with melted butter from the oven carefully. Pour the batter over the hot melted butter but do not stir. Then evenly spoon the banana mixture on top of the batter without mixing it in—this creates the characteristic cobbler topping.
