These Frozen Watermelon Treats are a refreshing and healthy summer snack made from pure watermelon blended with lime juice and a touch of honey or agave syrup. Perfect for cooling down on hot days, they can be enjoyed as creamy popsicles or bite-sized frozen cubes, optionally garnished with fresh mint and drizzled with chocolate or yogurt for an extra treat.

Ingredients

Main Ingredients

  • 4 cups watermelon (cubed, seeds removed)
  • 2 tablespoons lime juice
  • 1 tablespoon honey or agave syrup (optional)

Optional Garnishes

  • Fresh mint leaves (for garnish)
  • Chocolate or yogurt drizzle (optional)

Instructions

  1. Prepare the Watermelon: Cut the watermelon into cubes, carefully removing all seeds to ensure a smooth texture in the final treat.
  2. Freeze the Cubes: Spread the watermelon cubes evenly on a parchment-lined baking sheet. Freeze for 2 to 3 hours until solid.
  3. Blend the Frozen Watermelon: Transfer the frozen watermelon cubes into a blender or food processor. Add lime juice and honey or agave syrup if using. Blend until the mixture is smooth and creamy.
  4. Form the Treats: For popsicles, pour the blended mixture into ice-pop molds or small cups. Insert popsicle sticks and freeze for an additional 2 hours until fully set.
  5. Serve and Garnish: Remove the frozen treats from molds. Optionally drizzle with chocolate or yogurt and garnish with fresh mint leaves before serving.

Notes

  • Make sure to remove all seeds from the watermelon to avoid bitter bits.
  • Honey or agave syrup is optional and can be adjusted based on sweetness preference.
  • For an adult version, a splash of lime zest or a pinch of chili powder can add extra flavor.
  • Use ripe, sweet watermelon for best results.
  • These treats are best consumed within a week for optimal freshness.
